From lightest to darkest we produce Fancy, A-Medium, A-Dark, and B. All grades have wonderful flavor and are unique in their own right. Generally the the lighter the grade the more delicate the maple flavor; the darker the grade, the heartier the Maple Flavor! Maple Syrup Buyer's Guide: Fancy- Light Amber color, delicate maple bouquet. Delightfully mild maple flavor, excellent on ice cream or on foods which permit its subtle flavor to be appreciated. Medium Amber- Medium Amber color, pronounced maple bouquet. Characteristic maple flavor; popular for table and all around use. Dark Amber- Dark Amber color, robust maple bouquet.
